Dragon Fruit Dessert
I’m going to take a break of posting all the photos from Costa Rica and share with you this super easy and awesome Dragon Fruit dessert. I went to the grocery over the weekend and saw fresh Dragon Fruit and couldn’t pass it up. I know people would just eat it like a fruit, but here is now I eat dragon fruit, it enhances the flavor while looks pretty.
1 dragon fruit (1 ½ lb)
2 tsp sugar
1 tsp honey
Fresh Pineapple cubes for décor
Cut the dragon fruit in half.
Use a sharp pointed knife; make several horizontal cuts and several vertical cuts to achieve a checkerboard pattern. Do not cut through the peel.
When you are done cutting the checkerboard pattern, the fruit can easily be pulled, piece by piece from the peel. Run the spoon around edge of the dragon fruit to scoop out from the peel into a bowl.
Add 2 teaspoon sugar, 1 teaspoon honey, crushed ice; mix it real well and serve. Top it with few cubes of fresh pineapple and basil from our garden.
